Brinjal Curry

Ingredients:

Brinjal-2
Oil
Sugar
Red chilly powder
Salt
Curd=50 gms
Curry leaves
Mustard seeds
Dried red chilly
Method:
  • Heat oil

  • Slice and fry the brinjals and keep aside

  • Now fry mustard seeds and dry red chilly

  • add curry leaves

  • In a bowl mix curd, salt, sugar and red chilly powder

  • Add the curd mixture to the oil

  • Add fried brinjals and cook over low flame fpr 10 mins

  • Serve hot with bread or rice.
