Menu Planning For Monday

Monday... The first day of the week! Keep it light yet interesting :

MONDAY’S MENU: NON VEGETARIAN

Breakfast:

Muffins
Orange Juice
Boiled Egg Sandwich with mayonnaise and cheese
Banana
Tea


Lunch:

Rice
Drumstick Curry
Chilly Soya Bean
Pickle
Aloo Posto
Musoor Dal
Curd

Tea

Croissant
Tea

Dinner

Baked Potato
Mixed Vegetables
Roti/ Puri
Paneer Tikka
Jaljeera
Tomato Chutney

Muffin Recipe:

Corn Muffins
Ingredients:

1 ½ cups of flour.

1 cup of cornmeal.

1 cup of water.

¼ cup of shortening.¼ cup of sugar.

2 tablespoons of cornstarch.

2 tablespoons of vinegar.

1 teaspoon of salt.


Method:
1) Mix the shortening and sugar;

2) Add the cornstarch, vinegar and salt.

3) Beat in all of the remaining ingredients.

4) Spoon into a greased muffin tin.

5) Bake at 400°F (200°C) for 30 minutes or until a toothpick inserted in the middle comes out clean

Drumstick Curry


Ingredients:



  • Drumsticks : 10
  • Potato: 2-3
  • Onion: 2-3
  • Tomato: 2-3
  • Peas: 100gms
  • Dhania Powder: 1 tbsp
  • Cumin seeds: 1 tbsp
  • Turmeric Powder: 1 tsp
  • Red chilly powder: 1 tsp
  • Mustard seeds: 1 tsp
  • Curry Leaves: 5
  • Corriander leaves
  • Grated Coconut
  • Green Chillies:2-3
  • Corriander powder
  • Ginger garlic paste

Method:

  • Cut drumstick, potato and onions
  • Blend onion
  • Grate coconut
  • Make a paste of onion and cocomut
  • Make a puree of tomatoes
  • Heat oil
  • Fry mustard seeds and curry leaves
  • Add the coconut onion paste
  • Add green chillies, ginger garlic and corriander paste
  • Add corriander powder, turmeric, red chilly and cumin powder
  • Add drumstick amd potatoes
  • Add water and cover and cook
  • Add salt, peas and tomato puree
  • Boil on low flame for 10 mins
  • Top with corriander leaves and serve hot
