Roasted Sweet Potato and Apple Soup

Serves: 4

Ingredients

Sweet Potatoes: 6-7
Olive oil: 1 tbsp
1 chopped onion
1 sliced celery
1 apple sliced
Black pepper
Salt


Method:

Take the potatoes and prick them
Place in oven and bake potatoes for 45 minutes
Heat olive oil in pan
Fry sliced onion, celery and apple for 10 minutes or till soft
Take out baked potatoes
Scoop out potatoes from flesh and add to pan
Add 4 cups water
Add salt and pepper according to taste
Cook mixture till thick and smooth for approximately 10 minutes
Take out the mixture and puree it in a mixer and strain
You can add water to improve consistency
Serve hot with garlic bread
